How can I make a stromboli less dry?

I'm helping my mom put together 2 strombolis for Christmas Eve. She usually does an Italian with a bunch of cold cuts and cheese... but she says she doesn't want to do the other one (broccoli and cheddar) because it comes out dry every year. I told her I would find a remedy though. We're trying to figure out what she could put in it or do to it to make it less dry. We've tried taking it out a little earlier but it didn't help, there needs to be another ingredient. Another recipe suggests ham or chicken but I'm not sure if that will help. She uses regular pizza dough, flours it, puts eggwash on it before rolling it up... and just uses cheddar and broccoli. Do you have any suggestions for us to make it less dry? Thanks in advance!!
